From Playboy Boss, Pregnancy of Passion
Nina's Kentish Apple cake

  • 225g/9oz self-raising flour
  • Pinch of salt
  • 2 tsp cinnamon
  • 9 oz/225g light soft brown sugar
  • 4 eggs, beaten
  • 8 fl oz/200ml vegetable oil
  • 12oz/320g apples, peeled, cored and diced
  • 2oz/55g sultanas, soaked overnight in apple juice

Sift the flour and spice, then stir in the sugar.

Add the eggs and oil and mix until smooth.

Drain the sultanas, then add them and the apple.

Spoon into a greased cake tin (12in x 8in (30.5cm x 20.5cm))

Bake at 350F/180C/gas mark 4 for 25-30 minutes or until risen and golden brown. Leave in the tin to cool.
