Fran's coriander spice cake

  • 6 oz self-raising flour
  • 3 tsp coriander
  • 2 oz chopped walnuts
  • 6 oz butter
  • 5 oz natural yoghurt
  • 1/2 level tsp bicarb soda
  • pinch salt
  • 4 oz rolled oats
  • 6 oz light brown sugar
  • 2 level tbs syrup

Sieve together flour, salt and coriander.

Stir in oats, nuts and sugar.

Cut the butter into mixture, rub in with fingertips.

Warm syrup, yoghurt and lemon rind in saucepan. Add bicarb soda (it will fizz up so don't use a tiny pan!) and mix into dry ingredients

Beat well, then spoon into greased and lined 7" cake tin.

Bake at 180 degrees C for 45 minutes then 160 degrees C for 40 minutes.

Cool on wire rack.
