From The Baby Doctor's Desire
Kieran's Mango and Prawn Salad

  • 200g cooked prawns (preferably tiger - frozen is fine as long as they're thawed!)
  • 1 mango
  • 2 cloves garlic
  • 1 lime
  • about an inch of root ginger
  • 1 tablespoon nam pla (Thai fish sauce - light soy sauce is an alternative)

Peel and crush the garlic.

Grate the rind from the lime, then squeeze the juice.

Peel and grate the ginger.

Put all the above into a large bowl with the nam pla.

Peel and dice the mango, and add to the bowl.

Add the prawns.

Marinade for a couple of hours, then serve on a bed of mixed leaves.

Alternative:Swap the mango for a papaya; celery adds some good crunch, too.
