From The Doctor's Lost-and-Found Bride
Marina's Spaghetti Carbonara

  • 400g dried spaghetti
  • 200g pancetta (or streaky bacon)
  • 1 clove garlic, peeled and crushed
  • 3 eggs, beaten
  • 100ml cream
  • 50g parmesan, finely grated/li>
  • Salt and pepper, to taste

NB this contains lightly cooked eggs so is not suitable for pregnant women and young children.

Cook the spaghetti in boiling water until al dente.

Meanwhile, cut the bacon into small strips and dry-fry it lightly in a frying pan (you may wish to add a little olive oil if it gets too sticky) with the garlic (how crisp you like it is up to you). Remove from the heat and set aside.

Add the cream, half the grated cheese to the eggs and beat together. Season to taste.

Drain the spaghetti well, then tip it into the frying pan. Add the egg mixture and toss together it will cook the egg enough to make the sauce creamy.

Serve sprinkled with the remaining cheese.
