From One Night, One Baby
Mitch's Spanish chicken

  • 4 boneless chicken breasts, cut into cubes
  • 1 tbs olive oil
  • 1 onion, peeled and finely chopped
  • 1 clove of garlic, peeled and crushed
  • 1 tbs paprika
  • 1 yellow pepper, deseeded and cut into stripsli>
  • 1 red pepper, deseeded and cut into strips
  • 1 x 400g tin chopped tomatoes in juice

Serves 4.

Heat the oil in a deep frying pan.

Add the garlic, onion and chicken and saute until chicken is browned on all sides.

Add tomatoes, peppers and paprika. (You can also add 250g mushrooms at this point.)

Cover and simmer for about 30 minutes.

Serve with brown rice and green veg.
