From Italian Doctor, No Strings Attached
Sydney's Strawberry Tiramisu

  • 250g mascarpone
  • 2 heaped tbs icing sugar
  • 1 vanilla pod
  • 250ml double cream
  • 2 oranges
  • 50 ml framboise or strawberry liqueur (optional)
  • 12 sponge fingers (savoiardi biscuits)
  • 1 punnet strawberries, hulled and sliced
  • Zest oranges and scrape seeds out of vanilla pod. Add zest, vanilla and icing sugar to mascarpone and beat well. (It smells gorgeous at this point!)

    Whip cream to soft peak stage.

    Fold cream and mascarpone mixture together.

    Juice oranges and add the framboise. (If you don’t use framboise, add a bit more orange juice to make up the liquid volume.)

    Dip half the sponge fingers into juice mixture so they’ve soaked it up but are not soggy; layer in a serving bowl.

    Layer half the strawberries over the sponge fingers, then half the cream and mascarpone mixture over the strawberries.

    Repeat layers, finishing with cream and mascarpone.

    Garnish top with strawberries.
